Mini Egg White Fritatas

As most of you know, we are hungry people.  I have started making egg white mini fritatas again, as I did when I was training for the marathon last year.  Luckily, they have not induced PTSD.  Yet.
They are super easy to make and a good way to add a lean protein to your breakfast or for a snack.  Jim crumbles his over his oatmeal in the morning and tops all of it with salsa.

Mini Egg White Fritatas

Ingredients:

One container egg whites (I buy Trader Joe's 16 oz cage free) or the equivalent in egg whites (a great way to use any yolks to use in aiolis!)
Any fillers you want!  Last week I heated up a cup of frozen spinach and diced a tomato.  I have also use broccoli, onion, etc., etc.Shredded cheese (optional)
Crushed Red Pepper

Preheat oven to 425

Line muffin tin with liners (if you opt to not use liners, you'll have quite an annoying clean up!)
Divide veggie fillers evenly among cups
Divide egg whites evenly among cups
Sprinkle with cheese and crushed red pepper

Bake for 15 minutes or until egg whites have set.

Keep in fridge and enjoy!

I noticed on 100 Days of Real Food that they reposted their mini pledges for the year.  They are great reminders and ideas for eating for 2014!  One of my goals is to eat less sweeteners.  I try to never eat artificial sweeteners (unless I'm cornered or hoodwinked) but I feel I could even reduce the amount of real sugar in my diet.  On that note, I'll probably bake a large pan of brownies in the next week.  Yolo, I guess.  (Sorry,  pancreas.)

My other issue: no deep fried foods is on the list.  Ha!

Crock Pots

Do you use your Crock Pot?

I will be honest, we don't use it too much.  There are a few reasons.  First of all, I have an irrational fear of leaving it on while we aren't home.  Rather silly, as the whole point of a Crock Pot is that you can leave them unattended.  However, I was reading reviews of Crock Pots online and someone said there's shorted and sparked and caught fire.  Maybe that review as from Communist Russia circa 1080, who knows.  I also don't like to leave it on when the dog is home alone, as I feel it's cruel and unusual punishment for him to smell delicious meats cooking all day.  One of the other reasons I don't use it too much is because all of the food sort of starts to taste alike after while.  And if you aren't careful, all of a sudden you have a weird witch's brew on your hands with chicken tibias floating to the surface.  I did have someone suggest to me that I could cook in the Crock Pot at night while we are sleeping and then just reheat the food for dinner.  I am open to that.

But I do like Rachael Ray's crock pot recipes.  They are usually tasty and involve putting"toppers" on when you serve, giving your food a fresher taste.  Tonight I made her Asian Pepper Steak.  The directions make it seem like she cooks the rice in the Crock Pot (the picture doesn't seem that way) but I do cook it separately.  I also added cayenne pepper, crushed red pepper, and a cup of water to keep everything submerged while cooking.

Otherwise we had a lovely little Sunday.  We took the doggie to a near by forest preserve and went on a long walk in the woods.  I took a bath and was in my jammies by 2pm!  I spent a lot of time reading (currently reading The Lowlands by Jhumpa Lahiri) and Jim spent a lot of time yelling at the Bears.  We both have Tuesday and Wednesday off and I am only working an hour on Thursday.  Should be a nice New Years week.

Happy Winter!


Happy Holidays, dear friends!

I hope you have all had a wonderful December.  We've been very cozy here.  We spent Christmas with quite a few family members.  We decided to only buy presents for Trooper in our household, but were spoiled rotten by everyone else.  Thank you dear friends and family!

I can't believe we are winding down 2013!  We started the year when Jim sabred a bottle of champagne at a house party in Eugene, Oregon.  (True story.)  (I will save my year in review for next week.)

Tonight I am making Giada's Shrimp and Pancetta with Chimichurri.  (She uses both chicken and shrimp but I am being lazy.)  I will let you know how it turns out!

Snowy Days


Trooper loves the snow, but needs doggie booties!  While we were on a family walk the other day, we realized that the snow packs between his little paw pads and makes him limp.  Until he gets some doggie Uggs, I try to check his paws when we walk.  

There is a small park next to our condo that has a paved path loop.  The city plows it every time it snows, which makes it a lovely place to walk the dog in the morning.  We probably have around six inches of snow on the ground.  It has also been cold! I think it was 17 out this morning, which made me remark, "It's a bit warmer today!"  So far it has not bothered me this year.  (We'll see by February!)  I try to take walks with the doggie, work out, eat lots of fruits and veggies, and stay warm.  It is the time of year that I like to make things like Ina's Chicken and Biscuits, Turkey Chili, and homemade mac and cheese and enjoy our new fireplace.

Oh My Ganache

When I have to work on a Saturday, I often have the luxury of having the day off on Friday.  Today I used it to do all of the things I like to do and then some: go to the gym, run errands, clean, bake, kiss my dog, walk my dog, etc.  If only I had made time to craft! 

I think my phone said it was 12 degrees out when I woke up this morning.  Even though it's cold, the sun is out, which makes a difference.  I just throw on three layers of pants and puffer coat and scarf and mittens and two hats and get outside with my doggie (who loves the cold weather).

Tonight we are going to put up our Christmas tree!  I made the gingerbread I mentioned in my last post as well as some Chocolate Thumbprint cookies with Ganache.  Martha Stewart (that genius) has three variations of cookie dough and even more combinations and permutations of how to prepare that dough.  You could seriously use this one guide to make dozens of different cookies.  (Which would be Jim's dream come true.) 

I am also making Giada's White Bean Soup and Grilled Cheeses for dinner.  This soup is so yummy and simple.  And I think my dairy free comrades could just skip the cream step.  After I blended it, it looked great as it was.  And do yourselves a favor: buy an immersion blender.  My soup making life has changed for the better after that purchase. 

Hopefully I'll be able to get a family photo by our tree tonight!

Cookie Crazy

The Zika/ DiVerde house has a favorite holiday tradition: I make holiday cookies and Jim eats them.  We've been working on perfecting this tradition for nine winters now.  On Thanksgiving I made one of our favorites: ginger snaps.  I use the Better Homes and Gardens recipe.  Here are my tips: use butter instead of shortening.  (I have made them with organic shortening before for the dairy free people in my life.)  Just don't think about how much butter you are putting in.  Give in to the butter.  I also make sure to not overcook them.  An added bonus is that they make the house smell lovely while you cook them.  And in the spirit of ginger and molasses, I am planning on making a loaf of this sticky gingerbread to snack on while we decorate our Christmas tree this weekend.  And maybe a batch of cookies for my pal.

Adventures in the Life of Amanda and Jim

I am alive!  We have had a crazy few weeks and have a few more days of craziness.

First of all, we had a wonderful, wonderful time in Atlanta.  The wedding and rehearsal dinner we attended were both beautiful and so much fun.  We stayed at a lovely hotel that had a tv in the bathroom.  Oh la la.  Our hotel was connected to fitness club so I was even able to go to a hard core yoga class on Saturday morning.  (Women were doing hand stands while I stayed in child's pose.)  While Jim was busy doing wedding things, I brunched with a few ladies and went on a lovely walk.  Our only obstacle was that on the drive home we had to stop in Paducah, Kentucky when we heard the tornado sirens from the highway.  Just a half hour delay while we took shelter in a fire station.  It's a good thing we did, because the tornado did hit very close to where we were.  Luckily we did not have to take shelter in the drainage ditch as Jim had advised. 

And in other news: we are moving again!  In a few years, I'll be able to say to Jim, remember 2013 when we moved three times?!  The cigarette smell is too much for me to handle, so we're packing it all up and doing it again.  Our landlord has been very nice and found us another 2 bed/ 2 bath condo in town.  Hopefully we can rid our belongings of carcinogens once we move on Saturday.  After this, according to Jim, we are going to buy a one level wheel chair accessible home and die there.

Bean Dip

Have you ever made Giada's White Bean Dip?  I made this dip in about five minutes after work on Friday as I was invited to sub in a game of Bunco.  This dip is one of the easiest and tastiest (and maybe healthiest?) dips I have ever made.  And when I searched for the recipe just now, I found she also makes the same dip but with curry powder.  That's on my list, as I generally love all things curried.  I actually whipped up another batch tonight to have in the fridge for a snack with pita chips. 

Did you know we are driving to Atlanta on Thursday/ Friday?  Yep, 12 hours of driving to what looks to be a super fun wedding.  Today I wondered how many hours of car time Jim and I have logged together since May.  We're driven from Oregon to Illinois, Illinois to Ohio, and now Illinois to Georgia.  Yikes.

Moved In

Well, friends, we officially moved out of the parents house!  Although I miss them dearly, we are settling in nicely to our new condo.  It is a nice, spacious two bedroom/ two bath unit with a one car garage.  It has been lovely to be reunited with our belongings after having them in storage for five months. 

Like all good things, there is, of course, a catch: the elderly woman below us chain smokes in her unit and the smell is seeping in to our lives.  (What's a little lung cancer?)

We are trying to work hard to get rid of the smell.  The suggestions have ranged from cups of vinegar everywhere to illegal activities.  (I guess I should say that I will not be breaking the law.  Don't worry, Jim.)  Jim spent all day wiping the walls down with vinegar water. 

And my mind has also created the scenario that involves the woman falling asleep with a ciggie in her hand and burning our entire building down.  Needless to say, Trooper does not stay home alone much. 

But I will end on a positive note: it is a nice condo and I love living in Sycamore.  And I am married to a resourceful man that I love dearly and we are parents to the best puppy in the world.

The Tale of Raven


I have meant to post the tale of Raven all week.  This is a good lesson in making sure your doggies are all safe and sound.

During his morning commute last week, this lovely dog (with no collar or tags on) ran in front of Jim's car and Jim almost hit him.  Jim stopped the car and picked him up.  He looked like he'd been hit, but it turned out he was just old and arthritic.  Jim knocked on quite a few doors, but no one knew who this guy was.  Jim brought him home and left for work so Jim's step mom and I took over.  I called and left my name and his description with all of the local police and animal shelters.  We took him to the vet to see if he had a microchip.  Then we loaded him up in the car and headed out to the country road where Jim found him.  We just knocked on door after door and left our numbers in case anyone was looking for him.  The most depressing part was how many people told us that someone probably dropped him off in the country because he was so old.  I had pretty much decided we might have to keep him and named him Buddy. 

But, around 4pm his owner called animal control and got my number.  Apparently he'd run out when she took out the garbage that morning and they couldn't find him in the dark.  She was very worried and upset, and we were all glad he found his way home.  And his name was Raven.

Remember to make sure your dog always has tags on with your phone number and to get your pups microchipped.  You never know what might happen!

And Jim and I have now helped three loose doggies get home to their owners together!  We have some good dog karma coming our way.

Post Wedding

We are back safe and sound in the Midwest!  We had a wonderful but fast weekend in Oregon and Washington.  We landed in Portland at 11am on Friday and flew out of Seattle at 2pm on Sunday!  Whew! 

When we landed we did two things in Portland: Cafe Yumm (one of my faves) and Stumptown Coffee.  Oh my.  We then drove two hours south to Eugene and were able to see most of our dear friends there and went out to celebrate at the Bier Stein, another one of our favorite Oregon places.  I then made my running buddy wake up at 6am and run with me on a cold, dark Saturday morning just for old times sake.  (Luckily no PTSD flashbacks from marathon training.)  And before we left Eugene, we had coffee and potato doughnuts at the Hideaway Bakery.  (How did I not gain 10 pounds during this trip?)

We packed up and drove five hours north to Seattle (did I mention that we had a tiny metallic pink rental car?) and made it in plenty of time for the wedding.  The wedding was in a restored horse stable in Georetown, Seattle's oldest neighborhood.  It was so much fun!  They served delicious BBQ for dinner and doughnuts instead of cake.  We danced (gotta live up to our wedding reputation) and walked back to our hotel.  And the best part: we get to celebrate with the happy couple again in a few weeks at their Illinois reception! 

I am pretty pooped this week after our adventures, but it was worth it.  In the next few weeks we plan to start looking at places to live and start that ball moving!

Happy Birthday, Dear

Yesterday was my lovely husband's 33rd birthday.  He also found out some very exciting news, but I will let you call him to ask what that is.  We both had to work all day but celebrated by eating steaks as big as my torso.  In lieu of cake, I made him pumpkin bars.  I feel like you can't live in the Midwest in the fall without having pumpkin bars.  I found a really fun present for Jim on Etsy, a print of Autzen stadium by Albie Designs.  What a lovely artist! 


On Friday morning we continue the celebration by heading to Oregon and Washington for the weekend.  It's going to be a fun but fast trip.  We're very excited to see our dear friends and to consume Yumm sauce (well, maybe just me) and Ninkasi brews (both of us.)

Pupper Zika


Tell the truth: you miss this mutt's mug shot.  He misses you too.  This is a good shot of him sitting in one of the lawn chairs in the backyard like a little person.  He's probably clocked in, guarding the fence and yard from the neighbor dogs.  He takes his job very seriously.  Trooper loves being in Illinois and his family here.  He is still not taking his allergy medicine and has not had any skin issues since we left Oregon.  In general, he continues to be an angel.

I have had a great first week and a half at my new job.  It's keeping me busy and I am learning a lot of new skills.  Everyone is really nice and right now my commute is only ten minutes! 

Today seems to be the last day of hot weather in the forecast and then it looks like we'll be converting to more autumnal temperatures.  I think that will put me in the mood to start my fall and Christmas crafting for the year and to make things like pot roast. 

All right, readers.  I have to go give Trooper a kiss on the nose.

Getaway!

Is it really almost Labor Day? 

I've been preparing for a little weekend getaway to Ohio with my lovely husband.  It will be about a 7 hour drive.  I feel like we should plan one more trip this summer to the East coast, just so we can say we crossed the country together.  (And if you were wondering, Trooper is staying with the grandparents.  He's pretty excited.)  We have a few people to visit and I am hoping to get a good taste of the Midwestern summer before it winds down.  We've had some hot and humid weather in Illinois but I know before we know it I'll be complaining that it's too cold.  

Otherwise, I Jim is loving his new job and keeping himself busy with the law.  We have started to research our big move to our own place and hope to have it all figured out by October.  I am looking forward to the fall and some new adventures. 

Until then, I whipped up this Coconut Curried Shrimp for dinner this evening.  It's a pretty easy one and could be made with tofu, chicken, or just veggies.  Don't do anything Laborious this weekend.

Camarones

Run, Little Amanda!  Move those lil' pale legs!

We had a lovely weekend.  On Saturday, I was a lady who lunched al fresco, which was wonderful.  We also caught up with some friends and watched some kiddo anarchy.    On Sunday morning, I ran in the Graham's Sundae 5k.  It was a beautiful day and beautiful course.  I had the most awesome fan club cheering me on, which included my lovely in-laws, my husband and TWO doggies!  I pushed myself and finished in 26:05.  (My best 5k was 5 years ago at 26:02.)  This run was not microchipped, so I am thinking I actually ran it at just about 26 minutes.  I was the 45th runner to finish (out of 300 and some) and 16th female.  If the age groups had been in five year increments, I would have been second in my group, but since it was a small run, they were in 10 year increments, so I was fourth.  Still pretty good, if I do say so!  Then we headed to Graham's and enjoyed their wonderful coffee.  (I sadly did not get my free ice cream at the end; I felt like I was going to vomit.)  I tutored for a few hours and had a really great dinner cooked for me!  If you love shrimp and spicy and smokey foods, make this Shrimp Diabla!  http://www.dailyherald.com/article/20130813/entlife/708139857/  It was so flavorful.  You could also use the same sauce and add chicken if you wanted.  Thanks, chefs!

Spaghetti Carbonara

The parents are on a date, so it's a Friday evening with Jim and five doggies.  I am making Jim one of his fave meals: Spaghetti Carbonara.  How many times am going to have to tell you to make this meal?  I love making this for other people when I visit.  I made it for my brother and he loved it, my best gal friend and her family and they loved it, and a few other lucky ducks.  Here's the deal: make it with pancetta!  I buy the Trader Joe's cubed pancetta (you can also buy slices at most delis; you could get thick cuts and cube it yourself) and saute that in a little olive oil first.  I then remove it from the pan and saute the asparagus in the oil and pancetta juice.  (I won't call it grease.)  From there I continue the recipe.  And you should NOT omit the fried egg(s)!  This is also a great recipe for anyone who's dairy free.  (Note: a lot of other American carbonaras use creamer.  Go with the egg yolks!)

Fun Run?


Oh my gosh.  This picture both cracks me up and makes me want to crawl in the fetal position.  Almost four months have gone by since this crazy day.  My running buddy took this picture and labeled it #shouldhaveturnedleft.  For reals.  (My big toe nail has still not fully grown back. ) As I posted the other day, I am running in a 5K on Sunday.  I am excited to take part in a run that should take me less than 30 minutes (not five hours.)

Singapore Noodles

Are you looking for a yummy veggie recipe?  My darling husband found this recipe for Singapore Noodles and I whipped it up last night.  It was really tasty!  The only thing that was a little annoying was the carrots and cabbage.  I shredded them in the food processor which was much more convenient but then requires cleaning out the processor.  I used savoy cabbage but was thinking that you could even buy one of those bags of cabbage and carrots that is meant to be used for cole slaw if you wanted something faster.  Today I have a pot of Emeril's Shrimp Etouffee on the stove and am planning to reheat it when we get home and add the shrimp.  (I did change the shrimp stock to chicken stock.)  Another recipe with a bit of chopping and that wouldn't work well after work, as it has to simmer for 45 minutes, but could be a good Sunday or make ahead meal.  (Can you tell I don't like to chop?  Would you like to be my sous chef?)  Both of these recipes also used tomatoes, and I peeled and deseeded fresh tomatoes from our garden.  (Easy way to peel tomatoes: dunk them in boiling butter than ice water.)
And speaking of food and cooking, I was lucky enough to find Michael Pollan's new book, Cooked, on the new books shelf at the library.  I've just started reading it and am on the section on BBQ, so I'm obviously enjoying it.  If you haven't read any of his books, I highly recommend them.  He's a very easy to read author who will make you think a bit about the food you buy and eat.

More Muffins

Today we celebrate my wonderful husband's first day of work!  He just jumped in our new Corolla and headed west.  To help him have a fabulous week, I made him some healthy muffins to take with him.  These muffins are from a great blog, 100 Days of Real Food.  They are completely sugar free (and use honey and juice to sweeten.)  This woman has some great lunch box ideas.  You might use them for your child, but I use them for my 32 year old soon to be lawyer friend.

I can't believe the summer is winding down.  I had a great time tutoring the kiddos this summer and was able to work almost 30 hours some weeks.  They have asked me to help with some sort of ACT middle school program for a few hours a week next month in addition to my regular nights/ weekend hours. 

I have registered for my first 5K since our return to Illinois and since the marathon!  I'll be running in the Graham's Ice Cream (our fave ice cream parlor and site of many romantic dates) next Sunday.  A half hour run with ice cream at the end sounds pretty lovely. 

We are excited for a few weddings (and trips) this fall.  We'll be in Seattle the first weekend of October and Atlanta in the middle of November.  I'm looking forward to enjoying a good old Midwestern Fall, including Pumpkin Fest and apple cider doughnuts.  We've already discussed how beautiful Trooper's coat will look near the autumn leaves.

Bar is DONE

Our favorite soon to be lawyer is done!  He took the Bar exam last week.  He tested for two days and then went out and celebrated with a friend downtown.  Luckily he found his way back home and is alive and well and Barbri free.  He has also accepted a job!  Doing the law!  I won't tell you the name of the firm, as I don't really know.  He'll be commuting an hour each way right now, but he's happy to have a grown up legal job.  He is taking this week to reflect on life (and sleep in) and will start on Monday.  And Jim is actually out buying a new car as I type, as our days of being a one car family need to quickly end.  As Barney Stinson would say, "Hashtag lawyered."

Cous Cous Salad

If you are looking for a way to use up some summer tomatoes, I highly recommend this Bruschetta Cous Cous Salad.  (I did not use the celery and cooked the cous cous in chicken broth.)  I served it with sauteed shrimp, but it could also work with chicken or as a stand alone dish.  Quite a lovely summer dish.

This morning my lovely husband and doggie took me for a chocolate croissant at one of our fave bakeries and on a walk at the Leroy Oaks Forest Preserve.  There were tons of prairie flowers blooming and it was nice to spend an hour strolling along together.  Someone has been in a pretty delightful mood considering what's coming up on Tuesday.  (Favorite comment of the week: "Things I should not have done: Google 'I'm taking the Bar in a few days.'")

Yesterday I accomplished a small goal: I swam the length of the pool with no kickboard and without stopping and while attempting to maintain proper swim/ breathing form.  This may seem like a small thing, but when I started my swim lessons in Eugene last year, I panicked when I would hold my head under the water.  Next stop: sprint triathlon (when I can afford a road bike.)

Lunch Date

The Legal Beagle has been riding his bike to the Batavia Library to study during the week. (12 miles each way!)  Today Trooper and I joined him there for lunch.  It is 2pm and my phone says it's 72 degrees out.  My gosh, it's lovely!  After we ate, we walked Trooper along the river.  What a gorgeous summer day.  (The pic above looks a little grainy because it's an Instagram.)

We are both still searching/ interviewing for jobs.  I found out today I did not get one that I was really hoping for, but that's okay.  The universe will bring something my way that I enjoy and find rewarding.  And don't worry, I will let everyone know when my days of unemployment are over!

Summer

How am I supposed to ever get a book/ movie deal if I never post on my blog?


Summer evening bike ride along the Fox River.  Jim said, "Before we moved to Oregon, you would have never gone on a 7 mile bike ride to get a beer!"

It's hard to believe we've been in Illinois for almost two months!  Even on hot, humid days I still really like the Midwest.  Where else do you see lightning bugs at night?

Jim continues to study his buns off every day and night.  He will be taking the Bar Exam on Tuesday, July 30th and Wednesday, July 31st and will stay at a hotel those nights.  (It's better for all parties involved.)  He will find out his results (passing, duh) in October.

I am still tutoring kiddos part time and looking for a full time job.  I have had four interviews now, but nothing has worked out yet.  Patience, right?  Once we figure out what area we'll be living in, I will start looking for some volunteer activities.  My knees have finally recovered from the marathon (it only took two months) so I am back to running a few days a week, but nothing like those epic 2-3 hour runs.  (Insanity.)  It's been a good time to supplement running with swimming, free weights, biking, and lifting my wine glass to my mouth.

You are probably asking, "But how is the doggie?!"  Trooper is doing wonderfully!  He, too, is a Midwestern animal at heart.  (Did you know he was found wandering the streets of southern Indiana?)  He has adjusted to having four pug roommates and loves playing in the yard.  We have taken him off of his Cyclosporine and although he gets itchy, it is not bad enough to cause hot spots.  And, in general, he continues to be an angel.  Follow me on Instagram and you can see that mutt's mug shot.

We are settling into our summer routine.  Jim has another month+ of studying for the Bar.  It involves him telling us about fun topics like when a check is legally endorsed and other exciting things.  I am working part time tutoring K-12 children, which I really enjoy doing, while looking for something full time.  I am very happy to be back in the Midwest, although we do miss our Pacific Northwest friends very much, and other things about Eugene, such as the Hideaway's Potato Doughnuts.   But I don't miss the rain, my allergic reaction the state, our neighbors, etc.. 
And finally, one day you should call me and ask me about the time I gave my husband a haircut.  But only if you want a good belly laugh.

Whole Wheat Love

As most of you know, I love eating.  However, I try to not overeat and try to make sure the foods I'm eating are healthy for me.  (With the occasional pizza/ Italian Beef/ ice cream thrown in there.  Yolo.)  I have not done much baking since our return to Illinois, but I have been making whole wheat low sugar or sugar free muffins every week.  They are a great addition to Jim's lunchbox and a good snack for those of us on sabbatical.  This week I made whole wheat banana muffins (using three old bananas).  A lot of times I'll even just look at a regular recipe and substitute Canola oil for butter, honey for sugar, etc.  And if you're wondering, "Why even use whole grains?"  I found this article that is a nice little summary.  Why not at least give it a try?

Status Update

Hi Dear Friends! 

It was brought to my attention earlier today that I have not updated my blog in a long time.  Update: we are alive and well and living in Illinois!

The drive from Oregon went very smoothly.  We took four days and spent the night in Twin Falls, Idaho, Denver, Colorado, and Omaha, Nebraska.  A few lessons learned: add about three hours on to the projected drive time on your phone and don't order a salad anywhere between Eugene, Oregon and Chicago, Illinois (Denver, I'm sure, being an exception.)  Trooper was an angel (of course) during the drive. 

When we arrived, we put almost everything into a storage unit.  We are staying with our wonderful family and their four pugs.  Trooper took a few days to adjust, but seems to be having a great time playing and running around their fenced in yard now. 
Jim takes the train downtown every morning at 7:30am and generally comes back on the 6:20.  He is taking a Bar Review course in the morning and studying all afternoon.  He takes the Bar at the end of July and will find out his results in October.  Please direct all communications through me this summer. 

I am busy searching for a job.  I am tutoring a few hours a week, but am looking for something full time.  We have temporary insurance for the summer, but will need decent insurance soon.  (Thought: maybe people would be more adventurous with their career paths if they didn't have to worry about health insurance.)  Would you like a copy of my resume to consider me for employment?

I have been experiencing "Runner's Knee" since the marathon and have been refraining from running (as much as I hate that.)  In the meantime, I am exploring more cross training, such as weightlifting, exercise bike, and now lap swim!  (With a kickboard.)  I guess running 26.2 miles is serious business.

Packing

Preparing to move is a wonderful time in one's life.  Packing, cleaning things out, saying goodbye to friends, trying to find a job... there's no stress at all. 
We actually have a lot of our apartment packed and have been trying to get rid of the things we don't need anymore.  My awesome husband has been working much harder than me to make sure we are ready for the arrival of our first guests this Wednesday for graduation.  Our awesomely wonderful friends threw us a little going away festivity this afternoon.  And as sad and stressful as this week may have been, we are very excited to be returning to the Midwest.

Two More Weeks

Well, friends, we are wrapping up our time in Eugene, Oregon. 
I think I'm mostly recovered from the marathon.  I could barely walk for three days and was able to get back to the stationary bike on Thursday.  I still have a big toe injury and I'd say it's still questionable whether I'll lose it or not.  (The nail not the toe.)
Our favorite law student is 99% of the way finished with law school (some paper or something, who knows) so we've been enjoying our time together.  It has been sunny and dry here (yayyyyy global climate change!) so we headed out to the McKenzie River for a hike yesterday.  It was lovely and one day I'll post the pictures I took.  When I returned to Eugene, I had a bit of a Desperate Housewives afternoon.  A pedicure (I really needed a farrier), a margarita in the sunshine, a massage gift from the most wonderful person in the world, and dinner outdoors with friends.  Who am I?!
Otherwise we are packing and trying to enjoy our time in Eugene before we leave.  And if you're wondering if either of us have jobs yet: nope!  We'll definitely tell you all when we do!  My last day of work is a week from Wednesday, graduation is the 18th, and we leave on the 20th.  Where does the time go?  We're both very excited about our return to the Midwest.  Although the Legal Beagle will be consumed with Barbri all summer, his lovely sidekicks will be happy spend time with you.

Eugene Marathon

Guess what: running a marathon is not easy.  Who knew?
But I did it.  Oh my gosh, it was crazy.  On Sunday morning, I didn't hear my alarm go off and woke up a half hour late.  I scarfed down an English muffin with peanut butter and honey, a banana, and half a cup of coffee.  Jim and Trooper sped me over to my friend's house, who luckily lives a few blocks from the start, so we all walked over together.  The weather was perfect.  We lined up with the other 8,500 crazy people.  It was cloudy for the first half and eventually the sun came out.  We knew it'd be warm so wore shorts and our marathon t-shirts and my new Eugene Marathon hat.  I was so nervous.  I don't think my legs (especially my knees) ever fully recovered from my 21 mile run three weeks ago and my running partner has been nursing a bruised Achilles tendon for a few weeks.  We started a slow pace and felt fine until around miles 13- 15. Her boyfriend ran mile 8 with us, and at that point we were feeling great.  Jim ran mile 15 with us, and that's when things were starting to turn.  Tons of people cheer along the course, but most of them are during the first half, probably to see the Olympic athletes finish.  (The first marathon runner to finish this year came in at 2:22!)  After Jim left us things just got tougher and tougher.  It truly is a mental game.  We tried to practice our yoga teachings and just be in the moment, but it was rough!  We ate four Gus and finished all of the water in our fuel belts (probably because it was pretty warm and sunny for us) so had to start taking the water at running stations.  I had one bottle of electrolyte drink.  I didn't take the Gatorade until mile 24 in case it upset my stomach.  By mile 21 walkers and the elderly were somehow moving faster than us.  But we never walked and ran the entire time.  After mile 20 all we could do was focus on getting to the next mile marker.  The end felt really far away!  But we did it and finished on Hayward field.  Our official time was 4:59!  By that hour hardly anyone was left in the stands except our awesome partners and another good friend.  It hurt so badly to stop moving.  Luckily we collapsed in a beer garden for awhile.  I think that beer saved my life. 
Afterwards, we walked back to our friends' house and they made us mimosas and breakfast burritos.  (Glad to avoid the local restaurants as I'm sure they were packed.)  After 3pm, I camped out on the couch.  And except for going to breakfast to celebrate this morning (with another mimosa!) that's where I've been all day today. 
I'm actually a little sad that training is over.  We started the week of Christmas and ran around 400 miles in 18 weeks.  I don't know that I'll ever run a full marathon again, but I'm glad I did it.  I'm sure birthing a child is hard, but this was mentally and physically HARD.  I'll be sticking to the 5k and 10k life for awhile and maybe another half marathon (last year that only took me 2 hours!).  I guess it's time to put the breaks on the cookies and get back to being a little easier on my body. 
And just think: three weeks from today our little U-haul and Yaris will be pulling out of Eugene and heading back to Illinois!

Marathon Weekend

It's upon us!  My first marathon.  Sunday morning at 7am.  I was able to create an account very easily to track myself (text updates being sent to my lovely husband who will be running one mile with me.)  Visit www.eugenemarathon.com and click Get Your Bib Number.  This is also the site that will be airing live video of the finish on Sunday.  I anticipate to cross the finish line sometime around noon Pacific time, but have no idea what exact time.  And if you search for me by name, there is someone with the last name Zikas who is also running.  I'm hoping that person is an Olympic athlete.

I'm Alive

Hi Dear Readers,
I know you must miss me dearly.  I still exist, but am just absent from the blogosphere. 
Updates:
I have recovered from the influenza.  Some people said that running 21 miles post-flu may not have been the best idea, but I'm pneumonia free!  Yay!  (Even if my roommate did think I had both whooping cough and runner's induced asthma.)
My computer is still dead and the first place we took it has no idea why.  When the Legal Beagle is away doing important things like bowling, I am learning how to use a Mac. 
Marathon training is going well and almost over.  As stated above, I ran 21 miles last Sunday.  In 3.5 hours of pouring rain.  But it had to be done.  Your last long run should be 3 weeks prior to the marathon, allowing plenty of time for recovery.  And after running 12 miles this weekend, I realized I had not fully recovered.  (More yoga, please.)  The Boston Marathon was a total bummer yesterday.  I can't even imagine training for such an awesome accomplishment and being faced with something like that.  Now I just taper until April 28th.  I think you can watch me online again, but am not sure.  For now they have at least posted a Runner Tracker at www.eugenemarathon.com.  (Did you know I don't yet know how to copy and past on a Mac?) 
In other exciting life news, our time in Eugene is coming to a close.  My last day of work is May 15th, Jim graduates on May 18th, and we head back to Illinois on May 20th.  Jim will spend the summer studying for the Bar.  Do we have jobs?  Nope, not yet!  Who needs jobs? 
I made a lovely Thai quinoa recipe tonight and will post it for you when I can get on a computer again and also learn how to copy and paste a link.  (Quinoa, I know, I am hoping it is fair trade....) 
And don't forget: Thursday, April 18th is Trooper Zika's (Adoption) Birthday.  You better believe I'll be celebrating.

Intense

During an intense play session on Tuesday night, Trooper Zika seems to have injured his little doggie withers.  He's been limping around and has had trouble going up the stairs.  He seems to be a bit better today.  He has learned how to ask his dad to lift him on to the couch, so I'm wondering if he's going to fake the limp for a little while so he can be carried everywhere.

Here is a quick bulleted list of what else is new in our lives:
  • The skinny brownies I posted about last week were awesome.  You should all make them and then eat the whole pan in two days like we did.
  • I ran 19 miles this morning!  I'd post a picture of the blood blister I have to prove it, but I'll spare you.  
  • Today is my last "official" day of mentoring!  It will be bittersweet.  I think my LS will be transitioning to a new mentor in April.  
  • Not much else is going on.  Jim's doing the law and stuff (busy as always) and I leave on vacay next week.

Skinny

I just realized I haven't even looked at my blog in a week.  Sorry, peeps.
We made it through another week with nothing too exciting happening.  Marathon training is going well.  My joints and muscles are constantly tired and a little achy.  I am assuming they will be that way for six more weeks.  After a recovery week, we dive in to week 12 with a 6 mile run on Monday, yoga on Tuesday, 6.5 mile run on Wednesday, spin on Thursday, rest, then 19 miles on Saturday.  You literally have to be slightly insane to train for a marathon.
In baking news, the Legal Beagle (so spoiled) has been asking for brownies a LOT.  I love brownies, but have you ever looked at the ingredients?  I'll summarize: a ridiculous amount of butter, sugar, and chocolate.  Granted, I love all of those things, but we don't need a whole pan for the two of us.  With our hearts in mind, I baked these skinny peanut butter brownies today.  (Still a cup of sugar.)  Here's one thing I learned: don't use the word "skinny" when describing a baked good to the Legal Beagle.  Actually, a good rule is to not use the term "healthy" or discuss how you added Silken Tofu to a recipe.  I'll let you know how they taste when I cut into those suckers.
I also tried a new Crock Pot recipe tonight: Rachael Ray's Spanish Chicken.  This is a really tasty one.  I think the key is the lemon, keeping the new potatoes whole while cooking (to maintain some structure), and the fresh toppers added at the end.  (No olives, thank you.)  It's slightly reminiscent of a paella taste.  Also, I used chicken breasts instead of thighs.  I'm sure a mix of the thighs and breasts would also be tasty.  (Again, our hearts.)
All right, hopefully I'll just keeping running along.

Recovery

The morning after you run 17 miles, you're bound to wake up feeling like an arthritic 90 year old.  A lot of hobbling happened today.  I did want to share a few yummy recipes that I whipped up.  Although we love our usual banana/ peanut butter granola bar, I experimented with homemade cereal bars.  I made a few minor changes: I used egg whites instead of an egg, I replaced the honey with one mashed ripe banana and a few tablespoons of a maple/ agave mix.  They will be our morning snacks for the week.  I also made oatmeal rhubarb bars for a treat.  I loved the addition of the coconut flakes.  (I think they would be really great dairy free by replacing the butter with coconut butter.)  Go bake yourself some treats!

17

Well, we ran 17 miles.  I was really nervous and so was my training partner.  I feel like the jump from 15 to 17 was a mental jump too.  As with most things, your brain is your own worst enemy.  We prepared last night with a feast of Giada's Carbonara with Pancetta.  I think it helped to fuel the journey.  We graduated to 2 energy gels (around 6 and 12 miles) and wrote a hip hop song along the way.  By around mile 15 our legs turned in to jelly and ran on auto pilot.  We finished in just under 3 hours.  We celebrated with a giant challah bread strata with chicken sausage, kale, and onions.  Mind over matter.  Or strata over matter.  Our next long run is in two weeks: 19 miles.
Today was also a big day because I told the little girl I mentor that I'd be ending my time with her and the program.  Luckily she is open to getting a new mentor with BBBS.  We've been together for almost 2 and a half years, so I think it came as quite a shock to her.  Although she's 12, she lacks the emotional skills needed to deal with things like this.  I think in the long run it will be good for her. 
After those two accomplishments, I think it's time for an adult beverage.

High Roller

 Power breakfast!  Two egg white fritattas, half of a whole wheat English muffin with avocado, OJ, and coffee in my Trooper mug! 

Most things that happen in our house are followed with, "You better not blog about this!"  But when someone's new bowling shoes arrived, he wanted the world to see.  Rumor has it all of the dudes are buying their own bowling balls.  And did you know they have their own personal Facebook wall? 

I survived 15 miles on Saturday!  I'm alive!  Now it's on to 17 miles this Saturday. 

And if you're looking for a yummy recipe, I recommend Rachael Ray's Dijon Chicken.  I served it with a wild rice/ barley combo.  I also replaced the creme fraiche with Greek yogurt.  (Greek yogurt does congeal at a high temperature, but it still tasted yummy.)  My dairy free friends could probably even omit the cream all together and still have a tasty meal.

Carbs!

Maybe I'm getting old, but it's just lovely to come home from work on Friday (usually my break night from working out), drink a glass of wine, and eat dinner with my two favorite gentlemen.  Tonight I am making this delightful vodka sauce (thanks, Judy!) and pasta to get ready for tomorrow morning's 15 mile run.  I had a bit of a tickle in my throat today but there is no time for a day off from the long runs when you work all week.  Luckily my training partner is there for me and told me we'd just take it as slow as we need to if I don't feel great in the morning.  There's no vacation from being awesome.

Lean Proteins

I've been trying to up the lean proteins in my life.  On Sunday evening, I made Giada's White Bean and Chicken Chili to have in the fridge for last night.  I really enjoyed the flavors and Swiss Chard.  I served it with garlic bread and we're enjoying our new fave banana bread for a treat.  It's sooooo yummy.  And it's healthy, right?  Dark chocolate is so good for my heart. 
Last night I also prepped mini egg white fritatas for breakfasts.  I bought a small carton of egg whites and mixed in spinach, mushrooms, and cheese, then cooked them in muffin tins at 375 for ten minutes.  I've done similar ones (with yolks and chicken sausage) for Book Club, and they were a hit there. I ate two this morning with a small piece of toast with avocado.  And I'm sure I'll be ready for my banana/ peanut butter granola bar by 9am.  What are you gonna do?
Speaking of Book Club, I have not started this month's book, but I am still working through Jon Krakauer's book about Pat Tillman and Afghanistan, Where Men Win Glory.   I've also read Into the Wild, and really enjoy his journalistic style of writing.  I had no idea who Pat Tillman was and even if you did, you were probably wrong. 
No running tonight!  Cross training with yoga.  Last night my dear running buddy was sick, so I ran on the treadmill.  I'm glad she took the night off since she wasn't feeling well, but don't love running 5 miles on the treadmill.  All part of the territory though. 
And if you need to talk to the Legal Beagle, he is running at full speed and it appears that he will be doing that until May 19th.  He's a nut!

This is Gonna Get Real

I just wrapped up Week 8 (of 18) of training.  It was a down week, so we only had to run 8 miles yesterday.  Thankfully.  Tomorrow: Week 9, which will end with a 15 mile run on Saturday morning.  Yep, this is getting real.

Feed Me

I am literally always hungry.  My mornings are spent just making it to lunch.  (With two to three snacks.)  I eat a banana, a granola bar, an apple, and maybe some almonds during the course of my work day, and I am still starving by the time I get home to eat lunch or dinner.  I spend time googling things like, "healthy snacks" to try to fill me up.  And marathon training is only making me hungrier.  How do you fill yourself up without taking in weird preservatives, chemicals, and sugars?  Yesterday I baked these spiced chickpeas and they were a really tasty little snack.  And for dinner tonight I made these really tasty chicken pitas.  I baked the chicken yesterday and feel like I should have also made the salsa and/ or ranch dressing ahead of time to shave some more minutes.  I also added avocado and it was a really filling meal.  (I am also not sure why RR calls them "tacos.")  But I will still probably be hungry when I wake up in the morning.

Reduction in the Wolf Pack

When you are a part of an awesome wolf pack and the pack is reduced by 33%, you miss that missing wolf.  Come back, Wolf! 
The Legal Beagle has been gone since last Wednesday and Trooper and I have been left to fend for ourselves.  A few weeks ago, we decided to take Trooper off of his medicine because he's been doing so well lately.  And then the itching started again.  BIG TIME.  We gave him a Benadryl to help, and that night he had one of his head tremors.  Benadryl was the only medicine he had in his system, and after some googling (medical diagnosis via the Internet is always reliable), I read that in some dogs, the active ingredient in Benadryl can cause toxicity, which can lead to head tremors.  Then we started him back on the Cyclosporine.  What a handful!  (But he's worth it, of course.)
Did I mention that I ran 13 miles yesterday?  We did it!  Luckily the weather was great and the run went really well.  I had to hobble out of bed this morning and wasn't sure if my feet were properly connected to my legs, but I did it!  And there are only four more long runs left in training!

Anti-Football Sunday

Now, I know a lot of my friends and blog readers watch and love football.  And if that's your thing, great.  I, on the other hand, am missing the sports gene.  And I'm okay with that.  I also think that football needs some major changes as a sport, but that's a chat for another day.  Maybe it's anti-social, but I'm okay with skipping the game and making green chili, granola bars, taking my dog to the dog park, and doing a yoga video.  Sorry, peeps. 
All of you in the Windy City will be blessed with my husband's presence next weekend.  Lucky dogs!  I, on the other hand, will be running 13 miles (week 7: half marathon!!), eating waffles, and going to the KLCC Microbrew Festival.  (A gal can't just sit at home and pine away, can she?!)

Biryani and Yoga

Every Tuesday I go to yoga at Hardcore Yoga.  I love it even when I hate it.  Yoga is a nice time to look within, even if those things you think about are, "I really need a pedicure" and "My yoga mat smells like pot roast."  (Both of those things have literally gone through my mind in yoga class.)  Yoga is also a great way to cross train when you're running more than you should be.  One of the positives of making the great move in life to come here is that I started pursuing yoga more often and feel stronger because of it.
After yoga I made a lovely biryani.  This is a great weeknight version of the classic Indian dish.  I replaced the curry paste with curry powder and added some cayenne pepper.  I served it with cooked carrots, white jasmine rice (I let Jim have a break from brown rice!) and Trader Joe's garlic naan.  It was really tasty and yielded a lot of leftovers.  You should try it and hopefully it will make you think, Why do we not subscribe to the Metric System?  (Sorry, Jimmy Carter.  I still love you.)

Well Groomed Dog

I'm sorry, is heaven missing an angel?  Because he appears to be asleep in my living room.  Trooper went to the groomer's today.  Last night I actually found some dreadlocks in that crazy fur.  No more life as a trustafarian, buddy.  He was OVERDUE for a trip to the salon.  
The marathon is three months from tomorrow!  We ran 11 miles yesterday.  It was actually a bit rough.  There are a few things that could have contributed to this, including eating a poor dinner the night before as well as running at 3pm (rather than 8am).  But we did it!  I woke up walking like an 85 year old woman, but that goes with the territory, right?

Put Down the Quinoa

Well, readers, you're actually going to have to NOT buy quinoa to make the recipe I (like a jerk) posted last week.  According to some sources, we're actually oppressing Peruvians by purchasing it.  I'll be conducting some research into wheat and grain options.  I'll get back to you later on that one.
I am currently on week FIVE (of 18) of marathon training.  Our long run was 10 miles on Friday and I'm still hurting from it.  Tonight was a five mile run, and the good thing about running 10 miles is that it makes five feel like nothing.  Let's hope the next 13 weeks continue to go smoothly.  (Even if I'm limping a bit.)
Have you been wondering how Trooper Zika is?  I thought so.  He's been doing really well.  He's barely itching, and if he does, its not enough to give himself hot spots.  We've decreased his medicine quite a bit and are thinking of taking him off of it completely.  Since he's doing so well we haven't had him groomed and he has some straight up Grinch paws.  Life is pretty good for him.  He not only went to a party until 1am on Saturday, but he also gets to hang out with his buddy/ boyfriend during training.  (Trooper knows that his mom will love him no matter who he loves.)
What a great day for our country!  Hopefully everyone took a moment to consider the significance of Barry's inauguration on MLK day.  And I'm putting this out there: if Hilz becomes president, I'll be in DC for her inauguration.  With bells on.

Quinoa and Tofu

I made this pile of super foods last night.  It includes quinoa, tofu, kale, pumpkin seeds, and a veggie party.  (I am very lucky to have an open husband who ate it all and even complimented it.)  But don't worry, we still indulge at the manor.  Last Sunday I made these manicotti.  They were really, really delicious and a great make ahead meal.  I've never stuffed manicotti before and it gave me a new appreciation for Italian grandmothers.  What a labor of love!  Jim said, "I could eat that whole pan" so I am assuming they were good.
We made it through Jim's first week back just fine.  Four more months!  Can you believe it?
I am up early this morning for our 10 mile run.  It's been cold here but we've had a long break from the rain, which has been really nice.  Once we start running, the cold doesn't bother me.  On Sunday we will have finished our first four weeks of training!  (14 to go.)

Training

What does this gal need to run 9 miles?  New shoes (Saucony; I bought the same pair I trained in last year), running leggings, running shirts (layers), fleece (it's cold!), cushioned athletic socks (no cotton), watch (I'm obsessed with knowing what time it is), fuel pack with water bottles, Gu (I don't even want that gelatinous substance is made of), and cash in my purse for the GIANT pastry and coffee I'll be purchasing at the Hideaway Bakery when I finish.  (A lot of you helped purchase some of this great gear for Christmas or my Birthday!  Thanks!)
Everyone's favorite law student was sick as a dog this week.  It may have been the flu, but when you're as tough as that guy, you push through it.  He's back in action tonight making me a lovely pizza.  He's back to school on Monday, so it's a good thing he's better.  (Last semester.  Holy cow.)
In other news, I met with the director of Big Brothers Big Sisters to start the process of finding a new mentor for my LS.  I don't know how long it will take, but it's about that time.  Life is changing around here!

Strike

If you didn't know it, I am married to the nicest guy around.  He planned and executed one of the nicest 32nd birthday parties ever.  We had about 20 people and four lanes at the bowling alley.  After, we ate our fave tacos (even with the angry hipster waitstaff) with great friends at Belly Taqueria.  This gal sure feels special!

Wrapping Up Staycation

We have had such a luxurious week!  The best part has been spending every day with my sweetie and sleeping in.  What did we do?  We went to see The Hobbit (really enjoyed it), dog sat a friend's doggie, went out to a New Years Eve party (Jim sabered a bottle of champagne), went to lunch for my birthday, grilled out steaks for my birthday, went to Sweet Cheeks Winery, watched the Ducks game at the David Minor theater, cleaned out a bunch of our belongings and donated quite a bit, I ran 8 miles, and we welcomed our friends from Seattle last night and their doggie.  Whew.  And today we bowl in honor of my birth.
