Banana Granola Bars

Last night I tried these Banana Pecan Granola Bars, and they turned out really well.  I followed the recipe except I omitted the dried fruit.  (It sounded weird.)  Jim actually found this recipe in the blogosphere and sent it to me.  I was worried that they'd taste bland, but they were great.  I used sweetened coconut, but otherwise there was no sugar or honey in them.  They were pretty moist, so I would store them in the fridge as the directions say to avoid mold.  They were kind of like a cross between a banana muffin and granola bar, without flour or sugar.  Oh, and they are Legal Beagle approved.

When i was kid, I ate 15 bananas at one time :) This is my all time fav fruit !
